They say need is the mother of invention and I love to find myself hungry with a random collection of ingredients and just get in there and create something delicious that may defy what I was raised to think goes together. Or to uncover a healthier but no less yummy, satiating, and try and true childhood favorite. Its just another way I light myself up every day and make the mundane and necessary feel magical, energizing, and wildly rewarding.

How to prepare

  • Prep: I suggest beauty prepping your cooking experience with

    • Great lighting - candles if you’re feeling it

    • Music that makes cooking feel inspiring, relaxing, and magical (I recommend creating a cooking music list or collection of radio stations where its easy to find what you might be the vibing with to save you time - also regularly being on the look out for more fun cooking songs can help bring more joy into your everyday life)

    • An outfit thats great to cook in but also makes you feel like a goddess (if you’re often short on time I recommend having something you can throw over whatever you’re wearing like a sexy apron situation)

    • A clean clear space (cleanliness is godliness and also - energetically refreshing)

    • Little containers that align with your style joy

    • Anything else that will elevate your everyday meal prep experience - taking a little time to set yourself up to feel frequently fabulous is setting yourself up for success, reduced stress, and elevated happiness

  • Preheat the oven to 400 degrees

  • Prepare the Russet Potato

    • Take your Russet Potato and puncture holes throughout it with a fork

    • Sit your Russet Potato in a large enough pice of aluminum foil to fully wrap the potato like a little lunch sac - but do not enclose the potato yet

    • Generously slather the Potato Glaze over the entire potato

    • Wrap your potato in aluminum foil and close it off like your folding over w brown paper lunch sac

    • Place the wrapped potato on an oven tray, place in the oven, and cook for about 1 hour depending on your oven

    • You’ll know your potato is done when you can slide a fork right into it

    • Keep the potato wrapped until you’re ready to add the egg and other toppers

  • Cook your egg to over easy to medium depending on personal preference

  • Slice open the potato and add Salted Butter. Close the potato back up for a minute or so to allow the butter to melt. Then add the Brown Spicy Deli Mustard and Green Salsa and mix and mash it into to the potato to your desired amount..

  • Add the over easy to medium egg

  • Add the Jalapeño slices and chopped green onion to the potato.

  • Either add Crème Fraîche to the entire dish or add little amounts to each bite for optimal flavor control and enjoy!
