I love to add fruit to my egg breakfast dishes. Especially if I am pairing that fruit with some yummy cheese. Here are the ingredients you will need for this tasty dish:
*All my recipe quantities are for one person. Feel free to adjust your measurements for the number of people you are cooking for. This recipe uses primarily ingredients from Trader Joe's http://www.traderjoes.com/. Tip for beginners, always read the entire recipe before you start ;)
- Two organic free range* eggs (cage free often means that the chickens are still inside just not within a cage. This actually can be really unfortunate as they will pack the hen houses so full they chickens are literally on top of one another. Free range is usually the term you want to look for if you are hoping to find eggs from our bird ladies that are cruising around outside)
- 1 apple chardonnay sausage (you can usually find this at Trader Joe's http://www.traderjoes.com/)
- Sliced mushroom. I suggest either shiitaki or crimea.
- Organic blackberries
- Unexpected cheddar (you can usually find this at Trader Joe's http://www.traderjoes.com/)
- Rosemary
- Thyme
- Cilantro
- Chives
- Local wild blossom honey (if you eat local honey it will help reduce your allergies to local plants and flowers)
- Olive oil tortilla (you can usually find this at Trader Joe's http://www.traderjoes.com/)
- Olive oil (when you are cooking be sure you are not using virgin olive oil. virgin olive oil will get bitter when it is heated up.)
- Flower pepper (you can usually find this at Trader Joe's http://www.traderjoes.com/)
Now that you have all the ingredients - lets do it!
Start by chopping up your herbs (except your cilantro) and slicing your apple chardonnay sausage and mushrooms.
Once this is complete take a pan and add a thin layer of olive oil in the pan. You will add your chopped sausage and mushrooms to the pan and cook on medium heat. Once these items have cooked for a couple minutes add in your Unexpected cheddar, blueberries, healthy drizzle of honey, rosemary and thyme.
While those items are cooking prepare your eggs in an olive oil covered pan. Dust some flower pepper on your eggs either before or after you cook them. I prefer my eggs over easy but this dish would work with sunny-side up, medium or poached eggs. Dust the flower
I would heat up your tortilla on medium heat while you are cooking the eggs so everything is ready at about the same time. My favorite way to heat up a tortilla is on the stove top.
Once everything is done cooking on the stove top place your warmed tortilla on a plate. Then add the sausage, mushrooms, unexpected cheddar, blueberries, honey and rosemary onto the tortilla. Your next layer will be your eggs. Finish with a sprinkling of chives across the entire dish and a small dollop of fully intact cilantro leaves on top of the eggs. Once you get down to eating this dish I suggest mixing everything including the cilantro all together into one big delicious mess :)
